explain the advantage of the process emulsification

The fat globules when mixed with bile after entering of small intestine, the bile action on the fat globules and break down it into smaller units called emulsion droplets during the process of emulsification. In the end, the emulsion droplets are broken into fatty acids. The advantages of the process of emulsification are the rapid polymerization, lowering viscosity of the solution and easier to remove heat from the solution.
