All animals, whether large or small, have most of their cells in contact with an aqueous medium.
Cells are composed of water, inorganic ions, and carbonaceous (organic) molecules.
Water is the most abundant aqueous molecule in cells, accounting for at least 70% of total cell mass. As a result, interactions between water and other components of cells are of central importance in biochemistry.
An important property of water in this regard is that it is a polar molecule, with the hydrogen atoms slightly positively charged and the oxygen atoms slightly negatively charged.
Due to their polarity, water molecules can form hydrogen bonds with each other, form hydrogen bonds with other polar molecules, and interact with positively or negatively charged ions.
These interactions make ions and polar molecules readily soluble in water (hydrophilic). In contrast, non-polar molecules that cannot interact with water are poorly soluble in aqueous environments (hydrophobic).
Therefore, non-polar molecules tend to have minimal contact with water in exchange for being closely associated with each other. The interaction of polar and non-polar molecules with water and with each other plays an important role in the formation of biological structures.
