When there are excess amino acids, glucose, fatty acids and glycerol in the blood, insulin produced by the pancreas causes the cell to absorb and store them. Fat cell, liver, and muscle cells are especially specialized for this role. Fat cells also convert excess proteins and carbohydrates to fats (a process which is less efficient that absorbing and storing fats from the bloodstream). The more fat droplets they store the larger the cells become.

The adipocytes are the cells that store energy in the body in form of fats. The adipocytes are formed out of the mesenchymal stem cells by the process of adipogenesis. In addition to the mesenchymal stem cells, the adipocytes can also be formed form the bone cells. The adipose tissue has two major varieties; the white adipose tissue and the brown adipose tissue. The white adipose tissue has one large central droplet of fat enclosed in the cytoplasm while the brown adipocytes have several tiny droplets or fat floating in the cytoplasm of the cell.
The amino acids, glucose and fatty acids that are present in the food when goes to the intestine, stimulates the production of insulin from the pancreas. The insulin acts on the hepatocytes, myocytes and the adipocytes to stimulate the absorption of glucose, fatty acids and amino acids. It also stops the breakdown of glucose, amino acids and fatty acids. The building up of glycogen from glucose, fats from glycerol and proteins from amino acids occurs. The take up of amino acids and glucose by the fat cells followed by conversion into fatty molecules is also possible. The conversion of carbohydrates proteins into fat is less efficient then storing fat in a fat cell. The fat cells increase in size due to an increase in the fat intake of the body. The adipocytes can also divide in number when the concentration of fats in the blood stream in raised drastically.
Thus, the body starts storing fat by increasing the size of the existing fat cells as well as by increasing the number.
